I need your help! With all the salsa ingredients that are on sale this week -due to cinco-de-mayo quickly approaching- I am really wanting to mix some up. The only problem is I don't have a recipe. Every time I make it, the recipe seems to be "some of this and some of that". It always turns out well (or so I assume from the empty bowl my family leaves on the table), but I would still like something more concrete to go off of. So, if you have a killer recipe, send it my way! I would love to hear from you! "Muchas Gracias", in advance! :)

I'm sure that you could substitute fresh tomatoes in place of the canned ones. It was good, but it tends to get spicier as it sits, so if you aren't a big fan of spicy you might want to cut down on the pepper, or even leave it out all together.
Diced tomatoes
Fresh Cilantro
A little oil
Tomato Sauce
Diced onion
Fresh squeezed lemon juice
Salt
and if you want it a bit spicy add some jalapino

Okay, so I don't have a real recipe, but here is what I put in mine, and I LOVE it!
2 tomatoes
1 tomatillo
2 Tbsp. cilantro chopped
1/4 C onion
1 serrano pepper chopped
1/2 avacado
1 clove garlic
garlic salt (to taste)
juice from 1 lime
I think the tomatillo and the lime juice are the keys! So good!

This is the best salsa/dip ever!
Avocado Salsa Dip (a.k.a.) Cowboy Caviar
1 Anaheim pepper
¾ bunch cilantro
5 Roma tomatoes
5-6 green onions
5 avocados
1-2 limes
1 can black beans (rinsed)
½ bag frozen white corn
Cayenne pepper (to taste)
Salt & pepper (to taste)
1 c. Zesty Italian dressing
**Chop peppers, tomatoes, cilantro, avocados, and onions. Squeeze limes into dip. Add all ingredients together and season to taste. Serve with chips.

1 28oz can whole peeled tomatoes
1 7oz can chopped green chili peppers
1 can of salsa de fresca
1/2 med. onion, chopped
1 whole bunch of cilantro
Put in blender for 30 seconds!!! SO AMAZING!
