Nature Valley Granola Nut Clusters are the item that I picked for this week. These became an instant favorite at my house! I packed some sandwiches and snacks for a long drive we had to take. When I got these out I was sad I hadn't brought the whole bag with us and so was my husband! We have tried all of the varieties and love all of them. The pieces of nut make it more trail mix-ish than just a granola bar. Nearly every item we have we purchase when it is on sale- but these are something I have bought a time or two at full price. They get an A in my book.

One of the things I like most about living here in Utah this time of year are the U-Picks. My family and I love going out picking fruits and vegetables and taking them home and using them.

We picked Raspberries at the Raspberry Patch of West Mountain, and turned them into freezer jam. We had such a fun time driving there and enjoying the scenery. The families story on why they started a raspberry patch is fun to read! My kids also loved running up and down the rows.

We picked Blackberries at Phelps Berry Farm and enjoyed blackberry shakes and made blackberry syrup

We bought peaches at MJ Millers, and bottled them! This year we put a lemon in the jars with the peaches and they taste INCREDIBLE!

Canning Green Salsa and Enchillada Sauce

Our family is addicted to Pork smothered burritos, fresh salsa and enchilada sauce so this year as we planted our garden we kept that in mind. We planted rows of tomatillos, peppers and tomatoes. Last week we turned our tomatillos into tomatillo salsa. Check out how much fun we had.


Tomatillo Salsa
Makes about 4 (8 oz) half pints
You will need:
5-1/2 cups chopped cored husked tomatillos (about 2 lbs or 27 medium)
1 cup chopped onion (about 1 large)
1 cup chopped green chilies (about 2 medium) 
4 cloves garlic, minced
2 Tbsp minced cilantro
2 tsp ground cumin
1/2 tsp salt
1/2 tsp red pepper flakes
1/2 cup vinegar
4 Tbsp lime juice
4 (8 oz) half pint glass preserving jars with lids and bands

Directions:
1.) PREPARE boiling water canner. Heat jars and lids in simmering water until ready for use. Do not boil. Set bands aside.
2.) COMBINE all ingredients in a large saucepan.
3.) HEAT to a boil. Reduce heat and simmer 10 minutes.
4.) LADLE hot salsa in to hot jars leaving 1/2 inch headspace. Remove air bubbles. Wipe rim. Center hot lid on jar. Apply band and adjust until fit is fingertip tight.
5.) PROCESS filled jars in a boiling water canner for 15 minutes, adjusting for altitude. Remove jars and cool. Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed.

Quick Tip
When cutting or seeding hot peppers, wear rubber gloves to prevent hands from being burned.
