When I first started using coupons I felt like I was getting off the plane in some new country where I didn't speak the native language. I felt like I needed a dictionary to figure out what some of the words meant. I soon realized that it was actually quite easy, and there is no needto worry. I mean really, how scary does it need to be- its just coupons. =) So, to those of you who are new on the coupon scene,if you have question about terms and coupon usage, send us an email and we will do our best to help you solve it.

Great Deal On Peanut Butter

This week at Smith's Skippy peanut butter is on sale for $1.30 (at my store you didn't have to buy a case to get this price). The Natural variety was also on sale at my store (my fam's fav). Use Skippy Peanut Butter Products, any .75/2 (4-25-10) RP-3/28. It makes each jar .92! I bought 8 jars and they don't expire until May 2011.

Recipes using Sale Items

Hello! Its recipe time! This week the recipes will be using peanut butter. It is on sale as a part of the caselot sale at Smiths.

but with swim suit season quickly approaching here a few recipes that I will try instead. =)



Chinese Chicken Salad with Ginger Peanut Dressin
2 cups fresh spinach leaves
4 cups romaine lettuce leaves (or 1 bag European or Asian salad mix)
1 cup carrots, julienned
1 cup broccoli flowerets
2 cups bok choy, julienned
3 cups assorted Chinese vegetables (pea pods, bean sprouts, water chestnuts)
1 cup cooked skinned chicken breast, cut into thin strips
3/4 cup seasoned rice wine vinegar
2 tablespoons apple juice concentrate
2 tablespoons reduced-sodium soy sauce
1 tablespoon minced ginger root (or 1/4 teaspoon dried ground ginger)
1 clove garlic, minced
1/3 cup creamy peanut butter

Mix spinach, romaine, carrots, broccoli, bok choy and Chinese vegetables. Divide onto 4 plates. Equally distribute chicken onto salads. In a small bowl, combine the vinegar, apple juice concentrate, soy sauce, ginger and garlic. Mix well. Heat the peanut butter in the microwave until a liquid-like consistency. Whisk the peanut butter into the dressing mixture. Pour the dressing over the salads.

Makes 4 servings.

Banana Bran Muffins Recipe

Southern Banana-Nut Bran Muffins 


1 cup whole wheat flour
1 1/2 cups raw wheat bran
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup canola oil
2 egg whites, beaten
2 ripe bananas, mashed
1 cup fat free plain yogurt
1/3 cup creamy peanut butter
1/4 cup packed brown sugar


Combine flour, bran, baking soda, baking powder and salt in a mixing bowl and set aside. In large mixing bowl, combine oil, egg whites, bananas, yogurt, peanut butter and brown sugar. Mix well. Fold in the dry ingredients and mix just until combined. Spoon the batter into paper-lined or nonstick muffin tins. Bake in a 400F oven for 25 minutes or until firm to the touch. Remove from the pan and let cool on a wire rack. 

Makes 12 servings (one muffin each) 



Low saturated fat and no cholesterol 

1/4 cup creamy peanut butter
3 ounces fat free cream cheese
1 to 2 tablespoons lemon or apple juice
1/2 teaspoon cinnamon
1/8 to 1/4 cup natural applesauce
2 apples, sliced
1 small banana, sliced
celery stalks, sliced into 4-inch pieces
2 cups broccoli flowerets


Combine the peanut butter, cream cheese, juice and cinnamon in food processor. Blend until smooth. Add applesauce, little by little, to bring to the desired consistency for the dip. Chill before serving with fresh fruits and vegetables. Also try over baked sweet potatoes! 

Makes 8 servings (1/4 cup dip plus fruit and vegetables)

Case Lot Comparisons

It's case lot time at Smith's and Macey's this week!
Around this time each year I look forward to looking at the comparison prices that Prepared LDS Family puts together here in a PDF. I can't believe the amount of research she puts into making sure we get the most bang for our buck during case lot week. She compares the prices of products at Smith's Macey's Fresh Market, Sam's Club and even Costco. Make sure you check it out!

I personally don't see a ton of things I need to purchase during case lot sale. There usually aren't a ton of 5 star deals during case lot sale week.

I have found that by getting multiple coupons in Sunday and using them when products go on sale I am able to buy things cheaper than during case lot sale week and I can buy it in bulk with multiple coupons. Back in December I got my evaporated milk for less than .25 a can and now it's priced at .65 a can. I still have plenty and I made sure it wasn't close to expiring. I also use to purchase some tuna at case lot sale time, but just a week ago I picked up some in the packages for free.

How to Make Homemade Freezer Strawberry Jam

Have you seen the strawberries lately? They are gorgeous. Emily and I each bought some and decided to try our hand at freezer jam. We couldn't believe how easy it really was, how short a time it took and how yummy it really was!

You will need:
1 package Sure Jell pectin

2 containers of Strawberries (on sale at Smith's for $1.50)

4 cups of sugar

  • Wash the strawberries and cut in half

  • Throw into a bowl and mash them

(Emily's husband isn't a huge fan of chunks in his jam, so Emily tried using the blender and pureeing it, but her jam was a little runny. We both agreed that some chunks are good to have



  • Take 2 cups of smashed strawberries and combine them in a bowl with 4 cups of sugar. Yeah, Yeah we know it's loaded with sugar. We told you it was yummy, not low in sugar.

  • Mix it up really good and let it it sit for about 10 min, stirring occasionally.


  • At the end of your 10 min take a sauce pan and boil 3/4 cup water. Throw in your Sur-Jell pectin and stir for at least 1 min.


  • Add the pectin to your strawberry/sugar mixture.


  • Mix it up really good until the sugar and pectin are completely combined.

  • Pour into containers or jars.

  • Let it set out for 24 hours then put it away in the freezer.

The jam can last up to 3 months in the fridge or 1 year in the freezer.

Emily and I repeated the above process 3 times.

Kmart Doubles Coupons

Last year around this same time Kmart was rumored to be doubling coupons. Last minute they changed their mind and pulled out? A lot of people here in Utah were disappointed. This year when Kmart issued out the list of what stores were doubling coupons and Utah was on the list I rolled my eyes expecting to have happen what did last year. Well, this year Kmart has supposedly pulled through and is doubling coupons. now, I say supposedly because you just never know for sure how each store will handle this event. After talking to a manager about this event this is what I have discovered:

  • You must scan in your shopper rewards card FIRST!
  • You can only double 5 coupons per day
  • You can only double one of each coupon, so you know how we have multiples of each coupon, you can only use one of your multiples, not all of them
  • They will only double a coupon up to $2.00

I live about 25 min away from Kmart and I don't even plan on going there this week. I just don't feel like fighting the crowds to use only 5 coupons a day and only up to a $2.00 value! In the spectrum of things that means the most I can save a day using coupons is $20. It isn't worth the drive for me. I bet all the good deals are low on stock as we speak. I tried to go and get Princess and the Frog at Kmart a few weeks ago and the stock clerk made it clear to me that they have very little in the back and most of the products are on the shelf, so when they are gone, they are gone. I also think Kmart is already a higher priced store when it comes to grocery products.


How come Utah doesn't see more events like this?

Who knows. I am sure after getting into couponing you have realized that places in the Mid West and back East and even in Arizona, double coupons frequently. In fact I have friends that have told me about triple and quadruple coupon days in their area! Yes, I will admit I am jealous of being able to quadruple coupons, but it's just the way it is. I am happy with what I do save using coupons and I am happy with the way my food storage grows each week by using coupons.
