Tori and I love all the emails and comments that we receive from the She Shops Smart readers! It is so fun to hear from you. Every day we both try and answer as many questions as we can. Sometimes there is just too many for us to get to.

In the case that you have a question that we have not answered there is usually a very easy way to find it. You can check and see if there has been a post on it in the past. To find the past posts, scroll down on the main page of the blog and there will be a list on the left side. For some categories there will have been more than one past post on the subject. If that is the case just click on the subject and it will take you to a list of all posts on that particular subject/title. If you still cant find the answer let us know!

So, I was just about ready to share some of my zucchini with my neighbors when I saw that a bunch of readers have shared some great recipes and ideas. I think I am going to keep it and try some of these this weekend! Thank you so much for sharing!

mmmm... I grew up with Fried Zucchini. You cut it up, dip it in egg, then ritz cracker crumbs and cook/fry in butter with salt and pepper on them! Yumm it is amazing! Let me know if you do try it!

I got this one from my Mother in law. It is a Egg and Zucchini casserole. You just put egg and copped Zucchini in a casserole dish Cheese mixed in it and bake it until it doesn't jiggle. Then you put the dryed onions on top.

This is not really a recipe, but when we are swimming in zuchinni, I freeze it for future use. If you shred it and then measure it into two cup increments (or whatever your favorite recipe calls for) and then freeze it in a baggie, you can use it quickly. When it thaws, it will be very watery, that's okay because zuchinni has a naturally high water content, just throw the entire contents of your pre-measured bag in your recipe and you can have warm zuchinni bread at Christmas time! :)

Chop the zuchinni up and boil in water until soft. Puree and freeze. This is great to add to minestrone and other soups in the fall/winter.

Zucchini, from the GARDEN!

This is the first year that I have planted a garden. Well, a real garden, that was not in pots that sat on my deck. Being first time gardeners we have learned that you do not need many zucchini plants to turn a large harvest! We have zucchini, zucchini and more zucchini!

Here are a couple of recipes that we have tried, and a few we are going to try. All three recipes were found on I love that site. I ususally only try ones that have had lots of people rate them, and so far my family has loved the ones we have tried.

Grilled Zucchini

Prep Time: 5 Minutes
Cook Time: 4 Minutes
Ready In: 10 Minutes
Servings: 3

1 large zucchini
1/4 cup Italian-style salad dressing

1.Slice zucchini in to 1/4 inch slices. Toss is a bowl with Italian dressing.
2.Place on a hot grill and grill about 4 to 5 minutes or until nice grill marks appear and the zucchini is slightly limp. Serve and enjoy.

*** we have used this one but sliced the zucchini lengthwise so the it was easier to keep from falling through the grill. We have also made it with out the dressing and sprinkled cheese on top when almost done. Both are good.

Zucchini Pineapple Bread
Prep Time: 20 Minutes
Cook Time: 1 Hour
Ready In: 1 Hour 20 Minutes
Servings: 24
"Luscious pineapple is strewn throughout these ambrosial zucchini loaves, perfectly spiced with nutmeg and cinnamon."

4 eggs
1 1/2 cups white sugar
2 teaspoons vanilla extract
1 cup vegetable oil
1 1/2 teaspoons ground cinnamon
3/4 teaspoon ground nutmeg
1 (8 ounce) can crushed pineapple, drained
2 cups grated zucchini
3 cups all-purpose flour
1 teaspoon salt
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1.Combine flour, baking powder, baking soda, and salt.
2.In a large bowl, mix oil, eggs, vanilla, sugar, cinnamon, and nutmeg. Blend in pineapple and zucchini. Stir flour mixture into zucchini mixture. Pour batter into two greased and floured 9 x 5 inch loaf pans.
3.Bake at 350 degrees F (175 degrees C) for 1 hour. Cool on wire racks.

* havent tried this one yet but it sounds like a fun variation or traditional zuc bread

Cheesy Sausage Zucchini Casserole

Prep Time: 30 Minutes
Cook Time: 1 Hour
Ready In: 1 Hour 30 Minutes
Servings: 8

1/2 cup uncooked white rice
1 cup water
1 pound pork sausage
1/4 cup chopped onion
1 cup diced fresh tomato
4 cups cubed zucchini squash
2 (4 ounce) cans sliced mushrooms, drained
1 (8 ounce) package processed cheese food
, cubed
1 pinch dried oregano
salt and pepper to taste

1.Combine the rice and water in a small saucepan, and bring to a boil. Reduce heat to low, and simmer for about 20 minutes, or until tender. Remove from heat, and set aside.
2.Preheat the oven to 325 degrees F (165 degrees C).
3.Cook sausage and onion in a large skillet over medium heat, stirring until evenly browned. Drain excess grease. Stir in zucchini and tomatoes, and cook until tender. Stir in rice, mushrooms, and cheese. Season with oregano, salt, and pepper. Spread into a 9x13 inch baking dish, or a 2 quart casserole dish.
4.Bake, uncovered, for 1 hour in the preheated oven, or until lightly browned and bubbly.

You guys are AWESOME! Our inbox has been FLOODED with your show and tell pictures! We are so proud of you guys! Most of you also want to know how to figure out the percentage you are saving.
(I can't believe I am making a post about math! Math was my least favorite and most difficult subject for me in college! I saved my math classes for very last! I guess this is simple enough!)

Here is how you would figure it out:

I spent $36.98
I saved$ 212.98

1) Take both numbers and add them together: $249.96
2) Divide the number you spent by the sum of both numbers( 36.98/249.96) : 0.1479
3) Now take that number (14) and minus it from 100: 86
4) That makes it an 86% savings!
I know there are other ways to figure it out too, I just have found this way the easiest for me.

Smith's Doubles

It has been reported by several She Shops Smart readers that the doubles at Smiths are working GREAT! The computers do all the work, so the checkers don't have to manually put anything in like at Albertsons. The stores have been well stocked and are ready for you doublers! I love that there is no limit as to how many doubles you can use!
I could go through the list for you and show you some double scenarios, but you can pretty well do that on your own, so instead I thought I would point out that this a great time to figure out what you DO need or are missing from your stock pile. I am in desperate need of baby wash, so I am going to use the ABC Index, HERE, on grocery smarts list. It lets you search for a coupon and then tells you the location. It is an awesome resource! Figure out what you need, see if there is a coupon and then imagine it doubled. Oh, what a sweet ring that has! DOUBLED! See you there!

Online Coupons Reset

It is the first of the month, so you know what that means! The online coupons, Group A-Group C have reset. Here are some tips about online or Internet printable coupons:


  • Manufactures set limits on the amounts of coupons printed. When the limit is reached they pull their coupons off. That means occasionally you will go the print a coupon and it will be gone unless you printed it off at the beginning.

  • This is even more important toward the end of a month. Coupons group A-C are reset at the first of the month, so on the FIRST, when the coupons reset, they started out at zero.

  • Sometimes manufactures will reset their coupons after the limit is reached, but don't count on it. Just consider yourself lucky if they do.

  • I know some people are having problems with IPS. I wish I could help out in that area, but I am not tech savvy enough. I have heard that switching browsers can help. Example: On Internet Explorer and they won't print try Fire Fox or vice virsa. Another great resource is pinching your pennies. They have an entire forum to troubleshooting your IPS.

Some questions to commonly asked IP questions answered:

  • Where are online coupons located? All over! You can see over the the left hand side of this there are online coupons, group A-Singles . You can also find coupons on manufactures websites, you can receive them via-email and sometimes websites will give them to you after you join their mailing lists or take a survey for them. When the Grocery Smarts lists are up you will see links that take you to online coupons. The best part about those lists are that if there are coupons online, they are on the lists. You will never have to search for coupons for items on the list yourself! Grocery Smarts lists do all the work for you.
  • "Are IP'S worth it? It seems like a lot of paper and ink to be wasting." My answer is it depends. I think after you have a couple months worth of newspaper coupons its hit and miss. I only print ones of that make things close to FREE or if it is something I really like or know I will need. You'll never catch me printing of cereal coupons or toothpaste coupons. That is because I have DOZENS of them from my newspaper.

  • Now, if you are staring out and only have a few coupons from the paper on the list then I definitely recommend using IPS to maximize your savings. My sister in law started out and only had a weeks worth of coupons, but wanted to start saving right away, so she maximized her coupons by using IPS. She told me her husband was frustrated by all the paper in ink she was using, but after she shopped she had saved over $50. That paper and ink WAY over paid for itself. IP'S are a great way of subsidizing newspaper coupons, but not a great substitute! Newspaper coupons will benefit you way more in the the long end.

  • "How long do IP'S last". IPS have expiration dates on them the same way other coupons do. Most times they expire WAY faster than the ones in the paper. That's why I only print the ones off from the list that week. Otherwise they tend to expire before I have a chance to use them.

  • "Can we print them off in black and white?" It depends on your store. Some stores will take black and white, some will not. Be sure to ask if you are planning on trying black and white. There reason behind that is they are trying to protect themselves from illegal photocopied coupons.

  • Do all stores take IP's and the answer is no. Not all stores do take IPS. I do know that Albertsons and Smiths DO! My suggestion with other stores is call ahead and ask if you are planning on using them on your shopping trip.

Also don't forget the two IP's per HOUSEHOLD rule! Have fun printing!
