Does anyone else have crackers coming out their ears? I have so many boxes of crackers its a little bit silly. I just didn't have the ability to NOT buy them when the coupon made it so I got a free box of Triscuits as well. Result being that I have a FULL shelf of crackers! So what can you do with them besides just have cheese and crackers for a snack? Here are some recipes.

Ritz Cracker Chicken

Ingredients:
1 package Ritz crackers
chicken breasts or chicken strips (I use chicken strips. My family eats that better)
1 stick of melted butter
season salt
Preparation
Preheat oven to 350. Crumble up crackers real good. Dip chicken in butter. Cover good on both sides then put season salt on both sides. Roll in crackers on both sides.Put in dish. Pour remaining butter and crackers over chicken in dish. Bake for 1 hour.

Chocolate Mint Ritz

Ingredients:
1 lb. melted chocolate bark coating or 12 oz. bag chocolate chips
3 drops mint flavor
Ritz Crackers (I used wheat)

Preparation
Melt chocolate in microwave following directions on package. Add the mint flavoring.Dip Ritz Crackers in the chocolate and place on parchment paper to dry.
Notes
These taste like thin mint cookies.

Marie's Peanut Butter Ritz Cookies

Makes: 72 cookies Total Time: 1 hr 15 min

Ingredients:
1 extra large can Jiff creamy peanut butter
1 box low sodium Ritz crackers
3 packages chocolate almond bark

Preparation
Put Jiff peanut butter between 2 Ritz crackers. Repeat process until there are no more Ritz crackers left in box.In a double boiler melt chocolate almond bark. With tongs dip the crackers in the melted almond bark.Place on wax paper and allow chocolate to harden.

Notes
These are great no bake cookies. It is important that you always use the exact ingredients listed. If you do the cookies will taste like those famous Girl Scout cookies.

TRISCUIT RECIPES

Makes:
28 servings
Ingredients:
56 TRISCUIT Crackers
1-1/4 cups KRAFT Shredded Swiss Cheese, divided
1 can (8 oz.) sauerkraut, drained
1/4 lb. cooked corned beef, chopped
3 eggs
1-1/2 cups milk
1/4 cup GREY POUPON Dijon Mustard
1 Tbsp. chopped fresh parsley
Preparation:
PREHEAT oven to 350°F. Arrange 28 of the crackers in rows in greased 13x9-inch baking dish. Cover with layers of 3/4 cup of the cheese, the sauerkraut, corned beef and remaining 1/2 cup cheese. Top with remaining crackers.
BEAT eggs, milk, mustard and parsley with wire whisk until well blended; pour over ingredients in baking dish.
BAKE 40 minutes or until puffed and golden brown. Let stand 10 minutes. Cut into 28 squares, cutting between the crackers. Serve warm.

Use the Deli-Rye Triscuits
Up Cheese to 2 cups
Serve with KRAFT Thousand Island Dressing.

TRISCUIT "Bruschetta"

Prep Time: 20 min

Total Time: 27 min
Makes: 12 servings

Ingredients:
3 plum tomatoes, chopped
1/4 cup KRAFT Grated Parmesan Cheese
2 green onions, chopped
2 Tbsp. chopped fresh basil
2 Tbsp. KRAFT Light House Italian Dressing
1/2 tsp. minced garlic
36 TRISCUIT Reduced Fat Crackers

Preparation:
HEAT oven to 400°F. Combine all ingredients except crackers; spoon onto crackers.
PLACE on baking sheet.
BAKE 5 to 7 min. or until hot. Serve warm.

Make Ahead
These tasty summer treats can be made in advance. Combine all ingredients except crackers; refrigerate until ready to serve. Spoon over crackers, then bake as directed.
